Spaghetti Meatball Slow Cooker Recipe

For the meatballs

450 g

mince beef

25 g

bread crumbs

25 g

freshly grated parmesan

5 g

freshly chopped parsley

large egg, beaten

cloves garlic, crushed

1 tsp.

crushed chilli flakes

For the sauce

(400g) cans chopped tomatoes

2 tbsp.

tomato paste

1/2

onion, finely chopped

2 tsp.

dried oregano

clove garlic, crushed

salt

Freshly ground black pepper

Chilli flakes

240 ml

low-sodium chicken stock

350 g

spaghetti

Grated Parmesan, for garnish

Freshly chopped parsley, for garnish

Make meatballs: In a large bowl, mix together beef, bread crumbs, Parmesan, parsley, egg, salt, and crushed chilli flakes. Form into 16 meatballs and place in the bottom of a slow cooker.
In another large bowl, mix together chopped tomatoes, tomato paste, onion, oregano, and garlic. Season with salt, pepper and a pinch of chilli flakes. Pour sauce over meatballs. Cover slow cooker with lid and cook on high for 3 hours or on low for 6, until meatballs are cooked through.
During the last hour of cooking add chicken stock and spaghetti to slow cooker, breaking pasta in half to fit. Replace lid and continue cooking for the remaining hour.
Garnish with Parmesan and parsley before serving.
